Set largely by the hospitality convenio for each province, which sets minimum pay by role — these are public documents and worth looking up for the province you are moving to. Tips are a supplement in Spain rather than a substantial part of pay as in the US. Overtime and split shifts (jornada partida) are common and should be checked before accepting.
Entry-level roles need availability more than qualifications. Kitchen roles want experience. Reception roles want languages — English almost always, German and French frequently on the coasts and islands. Food handling certification (carné de manipulador de alimentos) is quick to obtain and often expected.

Seasonal contracts (fijo discontinuo and temporary) are standard on the coasts, running roughly Easter to October. Spain's 2021 labour reform pushed employers towards the fijo discontinuo form, which gives recall rights between seasons — worth understanding, because it is materially better than a plain temporary contract.
